Bracing for the storm

Hope everyone had a great weekend! I worked so I have nothing interesting to tell about today. Well, we are getting ready for hurricane Sandy aka Frankenstorm. School was cancelled for today, so of course my son is all excited. What kid wouldn’t be. In preparation for the storm, I whipped up a batch of these cookies. You can't survive without sweets, well, I can't anyway. *smile*   We've got all the other necessities such as flashlights, candles, water, and non perishables so we're all just in case anything happens.

    Here is the recipe from Taste of Home
    Chewy Chocolate Cookies
  1. 1-1/4 cups butter, softened
  2. 2 cups sugar
  3. 2 eggs
  4. 2 teaspoons Spice Islands® pure vanilla extract
  5. 2 cups all-purpose flour
  6. 3/4 cup baking cocoa
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 2 cups (12 ounces) semisweet chocolate chips
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition, and vanilla.
Combine dry ingredients; gradually add to creamed mixture. Stir in chips. Drop by teaspoonfuls onto lightly greased baking sheets.
Bake at 350° for 8-10 minutes. Do not over bake. Cool for 1 minute before removing to wire racks.
Yield: about 4-1/2 dozen.
