Maple Muffin Tops


When I cam home from work today I was in the mood for baking something. I pulled out one of my Christmas (yes, I said Christmas!!) recipe books and found a recipe for maple bars. They sounded good…but what do I do?

 

Not follow the recipe.

 

I'm notorious for that. My husband always wonders why I even have a whole cabinet bursting full of cookbooks. I'm rebellious like that, I like breaking the rules when it come to cooking. Sometimes it doesn't turn out but sometimes it does. Today's happy accident is what I call Maple Muffin Tops.
 
 
 

 

Ingredients:

 

1 cup butter

1 cup brown sugar

1/2 cup pure maple syrup

1/2 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

2 eggs

1 tsp vanilla

2 cups flour

Maple Sugar

 

Preheat oven to 375

Cream together butter and brown sugar. Meanwhile, in a bowl, combine flour, salt, baking powder and cinnamon.  Add eggs, one at a time to the creamed mixture, then add vanilla and maple syrup. Once combined stir in flour mixture.

 

Drop by spoonful onto parchment lined cookie sheets. I used a cookie scoop to get them even. Sprinkle with maple sugar before baking.
 
 
 
Bake for about 10minutes or until springy. Cool.

 

Yields about 2 dozen. (a little more if you don't eat any batter *wink, wink*)

 

 

I intended this to be more of a cookie texture it ended up being more of a muffin like consistency. Considering these were an "accident" they came out pretty good.….and hey, who doesn't like muffins?
