Tomato soup and grilled cheese

Mmmm, doesn't that look good? My husband makes the best grilled cheese sandwiches. There's nothing special to them just bread and American cheese but they taste so amazing. Much better than mine. He puts so much care in to it  and it takes about 10 minutes to make. I've tried cooking it his way and it never comes out. I don't know what it is. It seems like that for all the easy stuff. Even boxed Mac and cheese, I can't make that but I can make gourmet, creamy from scratch Mac and cheese or a complicated layered cheesecake. I don't get it. Oh well, homemade tastes better anyway.

I whipped this soup up for dinner.  If you're looking for something quick with ingredients you probably already have, you can't go wrong with grilled cheese and tomato soup.

1  can of crushed tomatoes

1  can of diced tomatoes

1 small onion

1 stalk of celery

1 tsp basil

1 tsp oregano

2 cups milk

1 tbs sugar

Chicken bullion granules

In a saucepan sauté onion and celery in butter until tender. Turn heat to low. Add tomatoes. Fill large can 3 quarters of the way full with water. Add 1 heaping spoonful of chicken bullion granules. Add rest of ingredients and salt and pepper to taste. Add milk and stir occasionally on very low heat until heated throughout; about 15-20 minutes.

Well, I guess I can make some 'easy' stuff!  This is definitely a keeper.

  1. I love tomato soup and grilled cheese together. Reminds me of winter lunches as a kid. Thanks for the great recipe.
