Chocolate Walnut Biscotti

Hello Friday!  You have no idea how excited I am that I finally figured how to put some version of the "pin it" button on my blog. (at the end of the post) I've tried various tutorials but I finally found one that actually worked.  My classes in {ancient} web design/development that I took in 2002 helped me a little with the html portion but boy, have things gotten more complicated since then…hence the word ancient, lol.


Yesterday before work, I wanted to do a little baking.  We're going over my in laws on Monday and even though there will be more than enough food (my husbands family is Italian) I want to bring a little something.  So I decided to make biscotti. This is my favorite recipe that I make every year at Christmas. I originally go the recipe from Taste of home but changed a few things.





1/2 cup butter, melted

3 eggs

2 tsp vanilla

2 1/2 cups flour

3/4 cup cocoa

1 1/3 cups sugar

2 tsp baking powder

1/2 tsp baking soda

1 cup chopped walnuts


Preheat oven to 325


In a mixing bowl combine butter, eggs and vanilla. In another bowl mix together dry ingredients. Gradually mix dry ingredients into wet ingredients. Knead in walnuts.


Divide dough in half and pat each into a 3 in by 12 in log (doesn't have to be exact).  Place on a parchment lined cookie sheet and bake for 30 minutes. Remove from oven and cool. Then cut diagonally into 1/2 inch strips. Place cut side down on baking sheets and put back in the oven and cook for 10 minutes on each side.


Remove from oven and cool.


I need to get in the habit of making these biscotti more often because they are so good. Well, I hope everyone has a great Christmas and Holiday! See you next week!
