Comfort Food: Mashed Potatoes


Today is a comfort food kind of day. It's valentines day and my washing machine broke for the last and final time. Last time I had it fixed the repair guy told me that if it breaks again we will probably have to get a new one. That was over a year ago so it's all good because it has lasted this long. Well, this morning my husband put a load of laundry in and started to make breakfast and once it filled up with water and started the first cycle…Boom! It started making a weird scratching noise then the room filled up with a burnt rubber smell. Not good. 

We spend the next 20 minutes pulling the sopping wet laundry out and squeezing it in the tub (Thank goodness my husband is fairly strong). Then I drained the washer using a 4 cup measuring cup and a large bowl…..

Yeah, today is definitely a comfort food kind of day. And mashed potatoes are the ultimate comfort food.

 
To make the potatoes you need:

6 medium/small potatoes
milk
garlic powder
4 oz of cream cheese
1 stick of butter
freeze dried chives

Quarter the potatoes (skins still on if you like) bring to a boil until soft. Drain and put back into hot pan. Add butter and cream cheese, and about a 1/4 cup of milk. Mash. Add more milk if needed to make creamy. Add garlic salt to taste about a 1/4 - 1/2 of teaspoon and about a teaspoon of chives and mash together.
