I have no idea what day it is. Between getting my hours cut to 2 days a week (7 hours total…yuck!), the storm, and the school cancellations from school, I am just so confused. Sunday when I went to work, I thought it was Saturday, Today I went and thought it was Monday. Anyone else get like that when their routine is out of whack? I sure do.
So, we survived the storm. I believe the unofficial total for my town was 29 inches. We didn't lose power (thankfully!) but I was prepared with easy food just in case. Our apartment has gas heat and gas stove, so I would have been able to prepare a fancy meal but who wants to fumble around in the dark to chop up ingredients…not this girl. So, seeing as it was just Jacob and I, I made sure I had a stock of frozen pizzas in the freezer (duh, I don't think they'd be anywhere else). I'm not talking about store-bought, cardboard taste a-like stuff, I'm talking homemade frozen pizza. Yummy!
These were super simple to prepare. All you need is:

1 pound mozzarella, shredded
2 cups of pizza sauce of your choice. This is a great way to use up leftovers!
Other toppings of your choice
First you make the pizza dough. Divide it into 6-8 pieces (depending on how big you want your pizza)
Roll out each piece into a circle. Spread a little oil on each crust and bake in the oven at 400 degrees for about 5-7 minutes. You only want the crust to be partially cooked not browned. Like this:
You don't want it to be doughy, though either, so if you need to put cook it a little longer or shorter, that is okay.. Once they are cool spread with sauce and top with cheese.
Next, put them on a cookie sheet in the freezer for about an hour. You need to do this so everything doesn't fall apart and turn into a huge mess. Take them out, wrap then in plastic wrap, and put them back into the freezer in a freezer bag.
When you get the urge for pizza, take one out, unwrap it put it on a cookie sheet, or pizza pan and bake at 400 for 15-20 minutes and the cheese is a nice golden brown.
Once you make these, I'm pretty sure you won't want to go back to the cardboard taste-alike in the freezer aisle.
