French Toast

Happy February! Whoosh…... Where did January go? Weren't we just celebrating New Years, like, yesterday? It sure seems that way!

This morning I don't have much to say, my brain seems to function better in the afternoon but I can type so I've got a quick and easy French toast recipe for one to share with you. It makes 4 slices, and, yes, I can eat four slices of French toast and I'm not ashamed. If you want to share it, be my guest.


Are you hungry yet?

I'm a breakfast person. I love breakfast, and it's my main meal of the day. If I don't eat breakfast, I don't function properly.  Usually I have a bowl of oatmeal and some fruit but this morning I was lucky enough to make myself some French toast with some French bread we had leftover from the other day. I don't always get the chance to make a nice breakfast like French toast, or pancakes, or anything fancy because I'm the only person in my house that seems to like breakfast. My husband is more of a lunch and dinner person, and my son is a eat the same breakfast cereal every single day for the next six years kind of kid. Seriously though,  what kid couldn't eat the same thing everyday? I'm more of an eat a humongous breakfast in the morning and eat small meals throughout the day kind of person.

French Toast is so simple all you need is:

4 1-inch slices of French bread
1 tsp cinnamon
2 eggs
1/2 cup milk (a tiny bit over 1/2)
1 tbs. butter

Crack eggs into a bowl. Wisk in milk salt and cinnamon. Place bread in mixture and let it sit for a minute or two to absorb the liquid. Turn over and do the same. 

Heat skillet over med heat and melt butter. Place French toast on skillet and cook for a few minutes until golden brown (just lift with the spatula to check) then turn over a and cook until done.

Place on a plate and  serve warm with butter and maple syrup.
