Homemade Fruit Snacks

Hello! How was everyone's weekend? Mine was uneventful and kind of boring so I decided it was the perfect time to do some cooking to stock up my freezer.   I made some bread, bagels and a few other things. Jacob was been asking  to make something "kid friendly"  for some time now and since February vacation is here,  I figured homemade fruit snacks would be the perfect kid friendly treat. I don't buy fruit snacks or other "kid friendly" food because I personally don't feel we need all that corn syrup and junk in our bodies but I have no problem making some with some fresh fruit.  

1/2 cup of lemon juice
2 cups of mixed berries (I used frozen organic)
1/2 cup orange juice (I used fresh squeezed)
2 tbs. sugar (optional)
5 packets of unflavored gelatin

In a pan combine juices. Dice fruit and add to the pan. Simmer on low heat until fruit is really soft and liquid is rich in color. 

Remove from heat and let sit for 5 minutes. Pour into a blender or food processor and process until smooth. Add gelatin and let sit for a minute then processes to combine.  Pour into a lightly greased 13x9 pan. Put in the fridge until set.  Cut into pieces and enjoy!

Besides being healthy and really tasty, they were really easy to make taking only about a half an hour from the time you simmer to when you pour it into the pan.
