Last night I couldn't figure out what to make for dinner. My husband took ground beef from the freezer so I had to use that. Not, that I had many options anyway..my freezer is full of ground beef and every type of chicken. That’s all we've been eating, it's cheap and I can always find good prices. Oh, and beans….we've been eating a lot of bean.
I started looking through my recipes and I wasn't feeling any of them. I didn't want meat sauce, meatballs were out because I had no bread crumbs, I didn't have any hamburger buns so I couldn't make burgers, no ingredients for Salisbury steak or stroganoff; I was running out of options until I remembered - Beef Pot Pie!
I had not made it in such a long time that I had forgotten about it. I even forgot how good it tasted. Mmmm…Here's how you make it.
1 lb ground beef
1 medium onion
3 stalks of celery, sliced
1 cup frozen green beans
5 carrots, sliced
2 spoonfuls (I used a regular spoon to measure) concentrated beef stock (I used Better than Bullion for this recipe)
2 cups of water
2 tablespoons flour
4-5 tablespoon red wine vinegar
1/2 tsp of thyme
1 tsp rosemary
In a pan cook ground beef, celery, and onion until vegetables are tender and beef and no longer pink. Sprinkle with flour and stir. While stirring, add two cups of water. Add beef stock, carrots, wine vinegar and spices. Don't worry if your carrots are still somewhat hard, they will cook in the oven too. Simmer for about 15-20 minutes. Add green beans and simmer for another minute or two.
Line Pie plate with pie crust. Spoon in filling then top with second pie crust. Cut a small slit to allow steam to release. Bake at 350 degrees for 45 minutes or until crust is golden brown. Let sit for 5 minutes, serve and enjoy.
This is a good meal if you're sick of eating the same old boring thing.
