Black Bean Baked Nachos


Last night I couldn't decide what to make for dinner. Actually, I did decided but when I went to make it, I didn't have any of the ingredients so I had to come up with something on whim. The two of us weren't very hungry and Jacob, well, he'd eat candy for dinner if I allowed.  I decided on Black bean baked nachos



They were really really simple to make. You don't even need a recipe. Here's how I made them.



Line a cookie sheet with parchement paper. Put a couple of handfuls of your favorite tortilla chips on the pan. Sprinkle on have a can of black beans. If you want to make your own canned beans check out my recipe here. Now, sprinkle on some olives and a few generous handfuls of mexican blend cheese. Repeat  with a second layer. 



Bake @ 350 for about 10 minutes or until cheese is melted. Top with salsa, olives, sour cream, tomatoes and anything else you desire. Enjoy!



To solve my problem of not having ingredients, I'm seriously consider meal planning.Any one meal plan? How do you like it?  I've got a growing collection of recipes, that I probably should use rather than just collect. I'm thinking it might also get me out of the rut of eating the same stinking thing week after week.

  1. Looks so good! We have one meatless meal a week and this would be perfect! I totally meal plan and it works great for us. I plan for Friday to Friday and shop on Thursday night. I plan my meals based on what's on sale at the grocery store. I've been doing it that way for years!
