Homemade Grinder Rolls

I am STUFFED! My husband took out ground beef the other night but we ended up ordering pizza because we were both sick of eating the same thing…I've been feeling like that lately…well, we had to use it up today so instead of the usual I decided to make some rolls and make meatball grinders.

I would share my recipe for meatballs but I just throw in a little or this, and a little of this. I don't measure. It taste the same every time I make it but once I start trying to figure out measurements it ends up tasting completely different…same goes with my sauce too. I'm an eyeballer when it comes to majority of my cooking so here's the recipe for the rolls I made.

1 cup water
2 tsp sugar
1 1/2 tsp salt
2 1/2 - 3 cups of flour
1 1/2 tsp yeast
1 egg yolk.
1 tsp cold water

Sprinkle yeast over water and let sit. Combine flour, sugar, salt in a bowl. Add water and mix until combined.  Knead until elastic (5-8 minutes if you press finger in the dough, it should bounce back quickly). Place in a bowl and cover and let rise until double; about 1 hour.

Shape into loaves.  Place on a parchment lined baking sheet, cover again and let rise for 30 minutes.

Beat egg yolk and water together and brush on loaves. Bake at 375 for 18-20 minutes.

This recipe makes 3-4 rolls but it can be easily doubled or tripled. Just NEVER add more than 1 tablespoon of yeast, or your loaves will rise faster than you have time to bake them.
