Blueberry Muffins

 Happy Monday! You know what the best part of waking up is? Breakfast! Well, that and being alive. I love breakfast food. I love food in general but  breakfast food is one of my favorites. I don't think I could survive without breakfast. I need breakfast.  I think you get the point. *Smile*

One advantage to it being summer besides the weather being gorgeous, is that I can actually make breakfast. During the school year with all the running around I very rarely make breakfast. It's usually scrambled eggs or cereal. I know I could on weekends, but I John isn't a breakfast person and I work, usually. But now that it's summer,  I can kick it up a notch and make breakfast. The first thing on my baking to do list was Blueberry muffins.

2 cups flour
1 cup sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp salt
1 pint (or two cups) blueberries
2 eggs, lightly beaten
1 cup milk
1/2 cup oil
1 tsp. vanilla

Preheat oven to 400

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Add berries and toss gently. Combine eggs, milk, oil, and vanilla. Stir into dry ingredients just until moistened.

Grease muffin tin or line with cupcake papers. Fill 2/3 full. Bake at 400 for 20-25 minutes until toothpick comes out clean. Cool slightly before serving.

Makes about 12-14 muffins
