Mixed Berry Turnovers


Most people when they come home from work, they feel like they've been run over by a trailer truck. Me, I want to come home and get stuff done. My job is so boring! Majority of the time I sit at the desk and stare at the drab grey wall, hoping the phone will ring. I'm on an active quest to find something else, but I have been unsuccessful thus far (a sign maybe that I should start doing what I love?)

I've been in kind of a funk lately, so I haven't done much baking or cooking other than the necessary meals we need to survive but today when I came home, I was in a baking mood. I wanted something easy to make that wasn't overly sweet so I decided to make some mixed berry turnovers. Oh my were these good! 



Ingredients:

4 cups of frozen mixed berries
1/4 cup of sugar
1 tablespoon orange juice
1/2 tablespoon cornstarch
2 sheets of puff pastry (thawed)
1 egg
1 tsp water
Sugar *optional*


In a saucepan on medium/low heat combine berries, sugar, orange juice and corn starch until thickened.  Let cool slightly.

On a lightly floured surface roll out dough into a rectangle, one sheet at a time. Cut into 6 equal sizes. Put a spoonful on cooled mixture onto each square.  Seal and repeat with the other sheet. Mix egg and water in a small bowl. Brush on top of pastry and sprinkle with sugar.

Bake at 350 for about 15 minutes or until golden brown and nicely puffed.

This recipe makes 12 and I can assure you that they won't last very long. But how can you really go wrong with berries and puff pastry??
