Monday Ramblings

Monday already! Hope everyone had a fantastic weekend. It was a hot one over here!  For the time being, I'll be posting lots of recipes since cooking seems to be the only thing I've been doing lately. My scrapbooking desk is in a state of complete disarray. I've got lots of crafts and diy things planned out in my head but until we move and figure out where on earth we are going, recipes it is.

Speaking of moving, we're looking at an apartment on Thursday. It's tiny from what I can see from the pictures but that is actually a good thing. We've looked at a few others in our not  price range that were barely livable and more outdated than what we live in now, so since this one is updated, tiny is something we can live with for a short time.  It will be a good motivation to pick up where we left off before Johns layoff and continue saving for a house more seriously than before. Not that we weren't serious because we have savings but, I don't know really…we just got into a slump. But now we are motivated more than ever to start looking for our own place within the next year or two.  

One thing I'm trying again is meal planning to save a couple bucks and to utilize the slew of recipes I have just sitting around.  When I went grocery shopping last week, I planned a whole weeks worth of meals, lunches, snacks but once I got to the grocery store I paid no attention to my list and bought whatever looked good.  By Thursday I had run out of food (not really, just the good stuff!) and I had bits and pieces and had to adapt recipes because I didn't have the right stuff to make it.

In my defense, this was my first trip back alone (John took over grocery shopping while he was laid off, he was better at sticking to a list) so it was exciting. I love grocery shopping! Lol. Now that I've got that first trip out of the way, I think I'll be able to stick with the list. Once I looked at the recipes and then made the list, I was really surprised at how small it was. Almost everything I had on hand already. I shouldn't spend nearly as much as I did last week.

Once we get into a new place (wherever that may be) I plan on getting a small file cabinet dedicated just to meal planning. I'm probably going to have to rip apart with *most* of my cooking magazines (boo.) but it will be for the better when it comes to organization. I have far too many recipes to keep in binders and I always forget which magazine the recipe is in, so a file cabinet seems to be the way to go. We'll see how it goes!

  1. I hope the apartment works out for you! I like your meal planning binder. I use a notepad. :)

    Meal planning is a tough one for me. I need to remember to make that a priority because it does help save money on groceries. We moved last year from CT. We are also looking forward to our own home soon but for now we are renting a house and our kids love it. Happy Monday to you!

  3. I've done meal planning for almost 15 years now and it has helped so much! Maybe if you had a cute notebook to put your meal pans in it would help? We have one night for leftovers, one night is a meatless meal and usually one night is fish. This helps too. I use the grocery ads to help plan, and buy the meat and fruit that's on sale and in season.
