This week is going by so fast! Probably because I'm not working very much. Funny how that works, huh? I've been busy doing other stuff though, like laundry, housework, errands, scrapbooking and most importantly -- job hunting. Now that we're settled into this place we've started to look into getting me a car. Yay! I'll have my freedom back. LOL. We had two cars before but when John was laid off, his car had too many issues with it, and neither of us knowing how to do the work ourselves, it would have cost us an arm and a leg to fix. So we sold it. We've survived with one car for a few months, but now that he has a job, one car is just not working out.
Last night I couldn't decide what I wanted to make for dinner. I took out chicken breast from the freezer but I wasn't sure if I was even in the mood to cook with it. With moving over the last few weeks, I haven't been in the mood to do much cooking. Now that we're settled, I want to get back into cooking mode. I wanted to start with something fairly easy to get me started. That’s why I decided to go with lemon Chicken
1/4 cup cornstarch
1/4 cup flour
1/4 cup water.
1/4 cup water
1/4 cup sugar
1 Tbs. cornstarch
1/4 cup lemon juice
2 Tbs. water
1lb. Chicken breast, thinly sliced.
2 Tbs. oil
For the batter, mix cornstarch, flour, and egg. Stir in water until batter is smooth. Toss chicken with Batter. Sautee chicken in oil until cooked all the way through and batter is crisp.
While chicken is cooking, bring the sugar, lemon juice, and 1/4 cup of water to a boil. Reduce heat to a simmer and mix cornstarch with 2Tbs of water and ass gradually to the boiling water. Simmer for another minute or two until the sauce thickens. It will be a thin jelly like consistency. When chicken is cooked all the way through, toss chicken with lemon sauce.
Serve hot over rice.
It didn't take much to get me back into cooking mode. After I made this, I made another batch of pancakes for the freezer, and today I already have a mental list of all the things I want to make.
