How is your Tuesday going? Mine is good so far! I'm always up late, so recently, with the move, purchasing a car, and now the beginning of the school year out of the way, I decided to take a few minutes each night to create a list of personal goals to complete for the next day. They can be silly things, or big things. It doesn't matter. At the end of the month I plan on putting together a mini album together with the lists. Here's my short list for today.
Today I will…
- Remember to take my vitamins
- Set my goal weight.
- Start exercising consistently to work towards that goal
- Work on Scrapbooking
- Have at least one nutritious smoothie
- Be Happy!
Jacob started school yesterday. He did really well. He wasn't as nervous as I expected because he found out he'd be having the same teacher as first grade. I guess with all the changes in the district, she moved to second grade. I didn't mind either, because she was a good teacher. When I picked him up he asked me if she was going to move to third grade next year to follow him, then onto twelfth grade and onto college. I love kid logic.
So, to start the morning off right, I made some scrambled eggs. I could live off of breakfast food, I love it.
Mushroom Onion and Cheddar Eggs
1/4 cup cheddar cheese, shredded
1/2 cup finely chopped mushroom
2 tablespoons of finely chopped onion
Salt and Pepper to taste
In a bowl beat eggs, and stir in the rest of ingredients. Cook over medium-low heat. Serve hot.
When I make scrambled eggs, I never add milk or water to them. Just eggs. I think adding milk takes away from the flavor and texture of the egg. Feel free to add it to your liking, but, try without first. You may not want to add that milk ever again.
