Pumpkin Oat Muffins


Brrr! It was so chilly outside.  I can definitely feel that fall in the air. I love it.  This is my favorite time of year. I love when the leaves change color, the apple picking, all the festivals and fairs that take place around here, the pumpkins,  all the warm food, holidays -- Everything!

I didn't do much of anything yesterday. I pretty much just sat around and read all day. I had not done that in a while. Usually I'm busy doing housework or errands, but today I woke up in a "blah" kind of mood, so I laid in bed and read.

Since fall is officially here I wanted to kick start the season with something pumpkin. That's only logical, right? 





Pumpkin Oat Muffins

2 Cups flour
1 cup oats
2 tsp. baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 cup milk
3/4 cup canned pumpkin
1 cup sugar
1 tsp. molasses
1/3 cup vegetable oil or coconut oil * See note below*
1 egg
2 teaspoons vanilla

Heat oven to 400°. Line 12 muffin cups with paper liners.

In a large bowl mix together dry ingredients. In another bowl combine wet ingredients. Add the we ingredients to the dry ingredients and mix until just combined. Don't over mix or your muffins will be dense.

Divide batter evenly between the prepared muffin cups. Bake for 15 minutes or until toothpick inserted in the middle comes out clean.

*Note:  If you are using coconut oil instead of vegetable oil, make sure you warm up the milk first so that the you are able to mix in the oil. If you add cold milk, the coconut oil will remain a solid.*



Enjoy them with your morning coffee or even a pumpkin spiced latte. Yum!
