Tortilla Pizza

How was everyone's weekend!  I worked a little bit then I came home and tended to my little container garden. I've always wanted to have a garden so now that I finally have an outdoor space I've taken full advantage of starting a container garden.

 I heard herbs were easy to grow so I started with some parsley. Once it started sprouting, I felt confident enough to try growing something else but I wasn't sure what I wanted to do next. Well, Jacob and I happened to be a the dollar store one day and we found these cute little Miracle grow greenhouses, so we picked up a tomato one and a cucumber one. 

When I was at Wal-Mart the other day I found some window boxes on clearance so I decided to plant some spinach. John and I eat spinach all the time, so I'm really hoping it grows.

Jacob slept over his grandparents house Saturday to Sunday so rather than cook an elaborate meal, I wanted to keep and simple and make something quick and easy. After browsing my cabinets and fridge,  I decided on Mexican Tortilla Pizzas.

If you're looking for a fast and simple meal this is it. This is a good meal for when you're home alone and don't want feel like eating a bowl of cereal (I know you all do this!). Or it's good for a quick meal after a long day of work.

For each pizza you will need:

1 flour tortilla
1 tsp of olive oil
2 tablespoons of enchilada sauce
1/4 cup Mexican blend cheese
Olives, black beans, jalapenos and other toppings of your choice

Brush tortilla with olive oil. Spread enchilada sauce. Top with cheese and topping of your choice. Bake at 350 for 10 minutes or until cheese is melted and tortilla is crispy.

Top with sour cream. Slice and enjoy.

Simple huh? This is a great meal to cure those Monday blues too!
