Mini Pizza Lunches

Happy Wednesday! Well, almost Thursday. Sorry I haven't been around much lately. I've been getting a few more hours at work, because there is a lot of craziness going on there and it's almost 4th quarter. Or is, I don't really follow all that stuff. All I know is  Christmas is right around the corner (literally, around the corner..walk out of my office and take a right. BOOM, it's like a winter wonderland. Yay!  I think it's a bit too early, buuuuuttt working in retail, it's expected to have Christmas stuff out now.  And I love me some Christmas stuff so it's not a big deal. I'm pretty sure we'll start playing Christmas music too. Double Yay! Because I love that too. Anyway……….enough about Christmas.

I don't know about you, but I'm a boring lunch mom. I hate to admit it but my sons lunch box is usually filled with the standard lunch box food -- some sort a sandwich, chips, a drink and a small dessert. Well he's been getting sick of eating the typical sandwich so I've been trying to come up with some creative ways to spruce up his lunch box. That's when I decided on making these Homemade lunchables.

Tonight as I was making pizza, an idea rang into my head. And it's sort of a spin off of the whole pizza lunchable idea, but in this case, the pizza is already assembled.

I just took pizza dough and created little 3 to 4 inch circles and created mini pizza and cooked them as usual. Then I let them cool and flash froze them. Once they were frozen I took them and put them into a freezer back for save keeping. ;)

Now, when I need a quick lunch for Jacob or he's sick of the same old boring sandwich routine I just take a pizza out the freezer, pop it in his lunch box, add a few more fixings like chips and a healthy fruit. And he's good to go. By the time lunch rolls around, the pizza isn't frozen anymore and he's left with a nice cold pizza. I don't know about you, but this family loves cold pizza.
