Cheesy Breadsticks


Yesterday was one of those. I don't feel like cooking days. Yes, even with my love of cooking, I sometimes loathe making dinner. Not often, but it does happen. We REALLY wanted to go out to dinner, but because of budget constraints we figured we can do it once a month…cheaply. Well, We already used up our monthly takeout pass so that wasn't an option.

Still, I wanted something gooey and greasy and crappy but easy to make. I decided on Pizza but I wanted something in addition to that, so cheesy bread sticks it was. 



These were so good and so Simple to make. Here's what you need:

1 recipe of your favorite pizza dough. Here's mine
1/2 stick of butter, melted
2 cups mozzarella cheese
4 cloves of garlic, minced
2 tsp. dried parsley
cornmeal

Preheat oven to 450°. Sprinkle two cookie sheets with cornmeal.

Divide dough into two equal pieces. Roll out one at a time to about 1/4in thickness rectangle. Place on prepared cookie sheet Brush with melted butter. Sprinkle with 2 cloves of garlic.  Then add the cheese; sprinkle with parsley. Repeat with second piece.

Bake for 10 minutes or until dough is cooked and cheese is melted and slightly browned. Cool for 5 minutes then cut into slices.

Serve warm.
