Gigantic Whoopie Pies & Turning 30


Whoa! Today I turn The big 3-0! Do I feel any different? Nah. Not one bit but I do finally feel that I am heading in the right direction with my life. I envy those who say that they figured their lives out in their 20's. I sure didn't. Not that my 20's were horrible, they were  just filled with A LOT of ups and (many) downs, and lots and lots and lots of lessons and choices, confusion and revelations about life in general. I am ready to say goodbye to my 20's and see what my 30's have in store for me. I'm crossing my fingers that it's good! 

30 I am not scared about…I'm saving that fear for 40. I'm not going to think about that though…I've got 10 years to go..please don't remind me. :) I think that's when I will start counting backwards…we'll see how the next ten years go though.

So. In celebration of making it to the ripe old age of 30 I made myself a sweet treat.  I asked Jacob how old I was going to be and he started laughing hysterically and said "90!!!" I don't look that old do I??? Excuse the pathetic serious looking cell phone selfie. I usually have a smile….Seriously I don't think I look 90. Right?? ;)




Not that store bought cakes are bad or anything. I just love baking soooo much. I was going to make a cake, but considering it was only John, Jacob and I a cake would just go to waste. I decided on whoopie pies instead, thinking it wouldn't make that many…well…..it didn't.

Technically. It made 4 pies.

But these things were so huge that the three of us ended sharing one. For some reason I was thinking if I made them bigger, there wouldn't be any leftovers. I honestly don't know what I was thinking... So I had They were delicious! Better the next day actually. And gone…yeah, we're pigs. ;) I don't make sweets like this often so when I do they're gobbled up fast. I'm thankful for a husband that has a huge appetite and can eat anything without gaining an ounce, so naturally he ate majority of the three leftover.

If you want to make them yourself here's the recipe. Feel free to make them smaller if you choose.




Cake:
1/2 cup butter, softened
1 cup sugar
1 egg
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1/4 cup cocoa powder
2 cups flour
1 cup milk

Filling
Recipe here. . Yes it is a lot of butter but this frosting is sooooooooooooo worth it. Believe me. It's one of the best frostings I've tried in my life.

Preheat oven to 350°

In a bowl of mixer cream together butter sugar, egg, baking powder, baking soda, salt and vanilla. In a separate bowl combine the flour and cocoa. Slowly add the flour mixture to the butter mixture. Add the milk. Beat until smooth.

Drop by 1/3 cup full on a parchment lined cookie sheet. Bake for 15 minutes or until they are firm to the touch.

Cool completely before  frosting.


I'm working today, so I made these on Saturday when I had a bit a free time. John decided to grab a pizza that night, and ended up getting one free because the shop we go to, got a crank call and they never picked their pizza up within the time period so the guy asked if we wanted it so it didn't go to waste. Free pizza and a dessert = a perfect night!
