Hello, Monday! How was your weekend? Mine was spent working and doing typical family things. My week was kind of busy too. I spent most of last week resume and cover letter writing. I love writing, so that wasn't an issue. I know I mentioned last year that John and I were considering relocating to find work, well we've been talking about it again. We never really stopped considering it we just kind of put it on hold because he ended up finding work here, and we got a place, and live just started to fall in to place. But since this job isn't the greatest and since warehouse supervisor/manager jobs are very scarce up here, we're considering again moving to a place where there will be more opportunities. Nothing set in stone, we're just considering moving as one of our options and putting our names out there to see what's going to happen.
Enough about the serious stuff! ;) Let's get to the food. Since I've been working more hours, I've been trying to come up with easy, yet nutritious meals that are quick to throw together.. Thurdays I came up with Spinach Chicken mostaccioli bake. It was delish and only took a few minutes to throw together!
Spinach Chicken Mostaccioli Bake
1 jar of your favorite spaghetti sauce (or use homemade, about 3 cups)
2 chicken breasts, cubed
1 16 oz box mostaccioli,
2 generous handfuls of fresh spinach
2 cups mozzarella
1/4 cup shredded Parmesan
Preheat oven to 350°
Cook pasta according to direction; cook chicken until no longer pink.
In a 13x9 pan, toss pasta with sauce, chicken and fresh spinach, Parmesan and 1 cup of mozzarella. Top with remaining Mozzarella and bake for 30 minutes or until heated throughout and cheese is melted. Let cool for a few minutes before serving.
