Cranberry Coconut Granola

Hi there!  How's you're week going so far. Mine is pretty good so far. Busy. But good. I'm grateful that I have the next two much needed days off.  I haven't been doing much lately. Just the usual stuff.  This week besides working and regular stuff so far I've cleaned and organized my pantry, made a good behavior chart for Jacob, wrote a letter to my little brother who just joined  the Army, (first one in our family to join! It's both scary and exciting), menu planning, and of course more digital scrapbook stuff.  Not very exciting, but that's okay! That's my life and I like it that way.

Now that I've gotten the serious stuff out  of the way, are you ready for a recipe?

Okay, Good. :) I knew you'd be. Judging by the title of this post, you already know what it is. Granola.

Granola has to be one of the simplest things to make and you can make SO many varieties of it to suit your own personal taste. This one I'm sharing with you is Cranberry Cinnamon Granola. 


3 cups rolled oats
2/3 cup honey
1 tablespoon molasses
1/4 cup sugar
2 tablespoons coconut oil
1 tsp cinnamon
1/2 cup walnuts, chopped
3 tablespoons chia seeds
3 tablespoons whole flax seeds
1/2 cup shredded coconut
1/2 cup dried cranberries

Preheat oven to 300°

In a small saucepan  stir together honey, molasses, sugar, cinnamon over medium heat. Once sugar is completely dissolived, stir in coconut oil.  In a large bowl, stir together oars, walnuts, chia seeds, and flax seeds; Pour hot sugar mixture over honey mixture and stir until well combined.

Line a large cookie sheet with parchment paper; spread mixture evenly on the pan. Bake for 45 minutes, stirring every 10 to 15. Remove from oven and stir in coconut and cranberries. Cool completely before storing in an air tight container.

Serve with milk, or over yogurt, or just eat by the handful! You won't be able to resist, it's that good.
