Two Bean Tacbrito

Happy Wednesday! The week is almost over. Thank goodness. Then April Vacation starts Friday. Jacob and I both are looking forward to sleeping in. Yay. Then Easter is on Sunday. With everything going on right now, I hate to admit it, but I totally forgot about it until someone mentioned it the other day. After that reminder, the Easter bunny had to go shopping….Whoops!

Okay, so here is the recipe I hinted at the other day when I posted the refried beans.  Since being on a very tight budget and not wanting to skimp on nutrition , I'm always trying to come up with  for meals that a cheap but nutritious and filling. This one you eat like a taco but the filling is similar to that of burrito. I wasn't sure what to call it so I came up with a 'Two Bean Tacbrito'. Feel free to call it whatever you'd like, it's still going to taste the same. 

1 onion, sliced
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
1/2 cup cooked rice
1 1/2 cup refriedbeans (or 1 can)
1/2 can green chilies
1 package of taco seasoning or make your own
1/2 cup water
Salt and pepper to taste
Olive oil
*optional* Sour cream, salsa, hot sauce, lettuce, diced tomatoes, olives, shredded cheese

Sautee onion and pepper in oil until tender.  Add refried beans, rice, water, fajita seasoning, chilies and black beans. Stir to combine. Simmer on low until water is dissolved, stirring occasionally.

Spoon into warm tortillas and serve with topping of your choice.

Makes 8-10 depending how much you fill your tortillas.
