Chicken Salad, a Hidden Desk and some Ramblings

Okay. This no Facebook thing is HARD. Not that Facebook was really anything significant in my life, but it was just nice to be connected. I had to delete it though. It's more of a symbolic thing. That account is associated with so much drama - family and otherwise - that I was honestly ready to rid myself of it and start new. Even though all the drama is solved and none of it took place on Facebook but Facebook was still involved in a weird way.

Symbolic really. I'm shutting the door on my 20's and since I opened this account in my 20's it had to go. It feels good taking a break from it so I can sort some things out on a personal level but IT'S JUST HARD. Lol :) I will be active again once I get confirmation of the two things I'm waiting for. Now I just wait. …and wait.

I've been doing TONS of scrapbooking lately. See my desk?

Yeah. Me neither. When it looks like this, that means I have been ultra creative, which I have been. I'll be sharing my creations in a later post. Today I have another simple recipe for you. I still love to cook, I just haven't been feeling it lately with everything going on. So I've been trying to keep things simple. Todays recipe is for chicken salad.

3 cups cooked chicken, shredded or cubed.
1/2 to 3/4 cup mayonnaise.
1 cup grape halves
1 celery stalk, chopped
1 small onion chopped (ping pong ball sized onion)

Combine all ingredients in a bowl. Mix to combine. Serve on bread, crackers or a lettuce leaf.

Chill for a few hours before serving for best flavor.
